Pujado Solano makes the entire elaboration and curing process of the anchovies following the traditional method. We buy the fresh raw material directly from the rasher, then we salt it and obtain the salted anchovy. We clean the fish carefully and bottle them in barrels at the Santoña factory, beside the sea. 1 year later, we continue with the production by cleaning, desalting, cutting, and filleting, until we get an exquisite and high-quality anchovy fillet in olive oil.

We will pack it with ice packs, although they may thaw during shipping, the anchovies will still maintain a fresh temperature.
